Sydney discovers the Argentine medialuna.

Good Food explores Sydney’s medialunas, with a visit to Tuki and the story of Lourdes and Mauro’s handmade pastries.

Lourdes Abboud and Mauro Cardoselli traded architecture and law for a shared dream: making Argentine medialunas in Sydney. What began with an expectation of 50 a week grew into a bakery producing around 1,500, according to the feature.

The story follows Mauro’s 48-hour process, with long rests between folds, and describes a soft crumb and a gently sweet orange-scented glaze. Alongside the classics, Tuki’s boxes include dulce de leche and vanilla custard.
